Chewy Peanut Butter Chocolate Chip Granola Bars
We actually got a break in the heat this week, so I turned the oven on for a little bit to bake these granola bars.
I like chewy granola bars. I’m not the biggest fan of the crunchy variety. We have a no-bake version in this post (which are really good), but I actually found these ones to be easier to make. You just mix everything together, stick it in a pan, and throw it in the oven. There is very little hands-on time, which is something I really like.
I think one of the best things about making your own granola bars is that when your kids ask you for a snack, you know you’re giving them something worth eating. Not something processed or overly sugary.
Chewy Peanut Butter Chocolate Chip Granola Bars
- 1 2/3 cup rolled oats*
- 1/3 cup honey*
- 1/4 cup brown sugar*
- 1/3 cup whole wheat flour*
- 1/2 tsp salt*
- 1 tsp vanilla extract*
- 1/4 cup butter, melted
- 1 cup peanut butter chips*
- 1/2 cup chocolate chips*

Directions:
- Line a small baking pan with parchment paper.
- Combine all the ingredients in a large bowl and mix thoroughly.
- Put the mixture in the prepared pan and pat down firmly.
- Bake at 350 for 20-25 minutes.
- Cool completely before cutting.
