Strawberry Easter Bread
There are many, many different types of Easter breads hailing from many, many countries.  Last year we made an Italian Easter Bread.  This year’s Easter bread doesn’t originate from any one country and resembles more of a yeasted coffee cake.
It will make a perfect Easter breakfast, a nice addition to Easter dinner, or a delicious dessert.

Ingredients

Dough

  • 1 cup milk, scalded and cooled to lukewarm
  • 1/3 cup sugar*
  • 2 T instant yeast*
  • 1/2 teaspoon salt*
  • 2 cups whole wheat flour*
  • 1 cup whole oat flour*
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract*

Filling

  • 1 cup strawberry jam
  • 5 oz almond paste, grated or crumbled into small pieces*

Finish

  • sugar*
  • 1 egg, beaten

Instructions
To make dough, combine all ingredients in a stand mixer. Knead until dough comes together and forms a ball. Additional flour may be needed, but be careful to not make the dough too dry. Knead for about 4 more minutes. The gluten does not need to be fully developed as this is not a light and fluffy bread.
Spray a large baking sheet with cooking spray. Divide dough and form into balls, using about two-thirds of dough in one and one-third in the other. Roll out larger ball and shape into a 9-by-12-inch oval, a little thicker than a pizza crust. Transfer to baking sheet.
Spread jam on dough to within 3/4-inch of its edges; sprinkle grated almond paste over jam.
Roll out second portion of dough into a slightly smaller oval, and place on the first, covering the filling. Roll the edge of lower dough up around the top dough, pinching to seal filling.
Make a few decorative cuts in top using kitchen shears or a knife. Cover with a clean cloth and let rise in a warm place until almost doubled, about 45 minutes. About 30 minutes into the rise, preheat oven to 350F.
Bake about 15 minutes. Remove, brush top with beaten egg and sprinkle with sugar; continue baking another 15 minutes or until golden on top. Serve, warm or hot.

Cracked Brown Rice Hot Cereal

Whole grains are some of the most nutritious and sustaining breakfasts you can make.   A little bit goes a long way.  Just a half cup of cooked grains is enough to satiate most people’s hunger until lunch.

When using whole grains, it is best to freshly crack or roll them just before cooking to maintain optimum nutrition.  You can crack grains in a blender or you can roll them in a Marga Grain Roller.  The nice thing about the Marga is that not only can you roll soft grains (oats, barley, and soft white wheat), but you can also crack hard grains (wheat, rye, rice…) all in the convenience of your kitchen.

The most important flavor in this cereal is probably the butter.  Without it, the cereal is kind of flat.  This cereal is a personal favorite of a couple of our past employees because of its nutty and buttery goodness.

  • 1/2 cup cracked brown rice*
  • 2 cups water
  • 1/2 tsp salt* (optional)
  • 2 T butter
  • Brown sugar to taste*

Instructions
 
Combine cracked brown rice, water, and salt in a saucepan. Bring to a boil over medium-high heat. Boil for 5-7 minutes, stirring constantly. Remove from heat. Add butter and stir until melted. Add brown sugar to taste. At this point you can also add your favorite fruit.

Whole Wheat English Muffins

English muffins are one of those things that you just have to make homemade.  It’s so much cheaper at about 10 cents a piece.  And they’re really not hard at all.  They’re actually pretty fun to make.

The English muffin texture is definitely unique.  It is dense and has large air pockets instead of the tiny, uniform ones we’re used to in regular bread.  While the dough for English muffins is very similar to regular bread dough, it’s actually the quick cooking on a griddle that creates the texture we’re all familiar with.

And when you make them yourself, you can make them out of whole wheat or spelt flour to add a little more nutrition to your breakfast or snack.

We sell these awesome little English muffin rings in our store.  They’re one of our biggest sellers, so there’s no doubt plenty of people are making their own English muffins.  They’re versatile too.  Not only can you use them as English muffin molds, but also as pancake molds, egg molds, or biscuit cutters.  If you look toward the top of the photo, you’ll find that the egg in the sandwich was cooked using an English muffin ring to make an egg that’s the perfect size and shape for an egg sandwich.

Ingredients
 
  • 1 cup water
  • 1/2 cup scalded milk
  • 1 T yeast*
  • 2 tsp sugar*
  • 1 tsp salt*
  • 4 cups whole wheat or spelt flour*
  • 3 T butter, softened

Instructions
 
Combine water, milk, yeast sugar, and salt. Gradually beat in 2 cups flour. Cover with cloth. Let rise in a warm area for about 1 1/2 hours or until the dough collapses back into the bowl.
 
Beat in the butter. Knead in remaining flour.
 
Roll dough out to 1/2-inch thick and cut out with muffin rings, leaving the rings around the dough. Let sit on a lightly greased baking sheet until doubled in size. Transfer muffins onto a fairly hot, well buttered griddle. Remove muffin rings. Cook until light brown. Turn once. Cool on wire rack.
